While all the people are busy searching for Christmas cake ideas online, we are sharing a quick and easy Christmas fruit cake recipe that you can try at home and in easy way.

Mix Fruit to Soaked for 24 Hours

225gm Black currants
225gm Candied ginger, cut
225gm Sultans
100gm Glace cherry halved
100gm Candied orange peel & cut
75 ml Brandy
50 ml Dark rum


350gm Self-rising flour
2 tsp Mixed spice
100gm Ground almonds
4 no Egg
75ml + 75 ml Brandy& Milk mix
225gm Butter ( suggest unsalted)
225gm Brown sugar

Mixed Spice Mix

½ tablespoon Ground cinnamon
½ tablespoon Ground nut meg
1 teaspoons Ground mace
½ tablespoon Ground clove
½ tablespoon Ground coriander
½ tablespoon Ground dry ginger


  1. Place the dried mixed fruit, peel and cherries in a bowl and add the brandy. Mix to coat all the fruit with the brandy& dark rum, cover with a maslin cloth and leave to soak 24 hours.
  2. Sieve the flour, mixed spice and ground almonds together.
  3. Beat the eggs with the brandy and milk mixture.
  4. Cream the butter and sugar together until light and fluffy and add the flour and egg milk mixture alternately, a little at a time, gently folding them in with a wooden spoon.
  5. Grease the baking tin with softened butter and place butter paper around & bottom of the cake tin.
  6. Add the socked fruit and mix well before spooning the mixture into the baking cake tin. Smooth the top with the back of a metal spoon and bake in the oven for 3 ½–4 hours at 140 °C.
  7. Keep an eye on the baking – start checking your cake for doneness from 2 and a half hours in. Insert a skewer in the centre and it should come out clean when it’s completely cooked through.
  8. Allow to cool in the cake tin before lifting out
  9. Wrap the cake well and set aside to mature. The flavours of the cake still intensify and the fruit in the cake will soften and be delicious.
  10. Make several holes with a skewer all over the cake and ‘feed’ the cake with brandy – pouring it down into the holes.(OPTIONAL)
